1 ½ pounds small potatoes, such as red, blue or gold, cut into 1-inch chunks (about 6 cups)
1 + 2 tbsp olive oil
1 tsp kosher salt
1/2 tsp freshly ground pepper
2 golden delicious apples, peeled, cored and sliced into 1 ½ slices
2 tbsp whole-grain mustard
2 tbsp pure maple syrup, dark or amber
1 tbsp cider or red wine vinegar
Preheat oven to 450°F.
Toss potatoes, oil, salt and pepper in a large bowl until coated. Spread out in a large heavy roasting pan. Roast 10 minutes.
While the potatoes cook, stir apples, mustard, maple syrup and vinegar together in a bowl.
Reduce oven temperature to 375°F. Remove roasting pan from the oven.
Add apple and mustard mixture to the potatoes and toss to combine. Return to the oven and bake for 45-50 minutes until the apples and potatoes are tender and the glaze is caramelized. Stir mixture occasionally once or twice while cooking.
Meanwhile, in a pan over medium heat, add olive oil and turkey sausages. Cook covered for 7-10 minutes and turn every 2 minutes until internal temperature reaches 165°F. Transfer to a holding plate to let turkey rest and keep warm.
When the potatoes and apples are fully cooked, top with the turkey sausages and serve warm!
