Apple Maple Turkey Sausage Vegetables and Pesto Pasta

Ingredients

  • 2 GATC Apple Maple Turkey Sausages
  • 3 + 2 tablespoons olive oil
  • 1 cup broccoli, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 2 carrots, chopped
  • pinch of pink salt & pepper
  • 2 cups brown rice bow tie pasta, precooked

PESTO

  • 1 cup fresh spinach
  • 1 cup basil
  • 4 tablespoons pine nuts
  • 1/3 cup olive oil
  • 1 tablespoon fresh lemon juice
  • pinch of pink salt & pepper

Directions

  1. Preheat oven to 400°F.

  2. In a large bowl, add olive oil, broccoli, bell pepper, zucchini, carrots, salt, pepper and mix until thoroughly combined.

  3. On a sheet pan, add vegetable mixture and cook for 15 minutes. Remove sheet pan from oven, mix and flip the vegetables and cook for 15 more minutes.

  4. Meanwhile, in a food processor, add pesto ingredients and blend until smooth.

  5. On a cutting board, slice GATC Apple Maple Turkey Sausages into 1/2 inch pieces.

  6. In a large skillet, add olive oil and turkey sausage pieces. Cook covered for 7 or so minutes. Turn over every 2 minutes until internal temperature reaches 165°F.

  7. Then mix together the vegetables, pasta and pesto until thoroughly combined.

  8. Gobble up and enjoy!
