Smoked Mozzarella + Broccoli Rabe Turkey Sausage Skillet

Ingredients

  • 1 package GATC Smoked Mozzarella + Broccoli Rabe Turkey Sausages
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 1 medium sweet potato, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sauerkraut
  • 1 1/2 cups mini sweet peppers, sliced
  • 1 medium avocado, diced
  • 1 egg, optional

Directions

  1. On a cutting board, slice GATC Smoked Mozzarella + Broccoli Rabe Turkey Sausages into 1/2 inch pieces and set aside.

  2. In a large cast iron skillet over medium heat, add olive oil, onions, sweet potato, garlic powder, paprika, salt, and pepper. Mix together and cook for 5 minutes, stirring frequently.

  3. Then cover and cook for an additional 7 to 9 minutes, stirring occasionally to avoid any burning.

  4. When onions begin to caramelize and sweet potatoes become soft, add turkey sausage, sweet peppers and cook 4-6 more minutes.

  5. Turn over and repeat until vegetables are fully cooked and turkey sausage internal temperature reaches 165°F.

  6. Remove from heat, and top with sauerkraut and avocado.

  7. Serve warm. Gobble up and enjoy!
