- 1 package GATC Smoked Mozzarella + Broccoli Rabe Turkey Sausages
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 1 medium sweet potato, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup sauerkraut
- 1 1/2 cups mini sweet peppers, sliced
- 1 medium avocado, diced
- 1 egg, optional
On a cutting board, slice GATC Smoked Mozzarella + Broccoli Rabe Turkey Sausages into 1/2 inch pieces and set aside.
In a large cast iron skillet over medium heat, add olive oil, onions, sweet potato, garlic powder, paprika, salt, and pepper. Mix together and cook for 5 minutes, stirring frequently.
Then cover and cook for an additional 7 to 9 minutes, stirring occasionally to avoid any burning.
When onions begin to caramelize and sweet potatoes become soft, add turkey sausage, sweet peppers and cook 4-6 more minutes.
Turn over and repeat until vegetables are fully cooked and turkey sausage internal temperature reaches 165°F.
Remove from heat, and top with sauerkraut and avocado.
Serve warm. Gobble up and enjoy!
