- 1 package GATC Smoky & Sweet Chili Turkey Breast Strips
- 1 head of cauliflower, sliced into 1/4-1/2 inch strips
- 1 tablespoon avocado oil
- 1 tablespoon taco seasoning
- 2 tablespoons olive oil
- 1 Roma tomato, cubed
- 1/4 white onion, chopped
- 1/2 cup corn, canned
- 1 cup cheddar cheese, shredded
- 1/2 avocado, cubed
- 1/4 cup salsa
- fresh cilantro
- green onion, chopped
Preheat oven to 450°F.
In a bowl, toss cauliflower with avocado oil and taco seasoning.
Distribute cauliflower evenly across a parchment-lined sheet pan and cook for 15-20 minutes.
In the meantime, add olive oil and cook GATC Smoky & Sweet Chili Turkey Strips for 2 minutes. Turn over and repeat until internal temperature reaches 165°F. Transfer to a holding plate to let turkey rest and keep warm.
Remove sheet pan from oven, and layer cauliflower with turkey strips, tomato, onion, corn, and cheese.
Return pan to oven and continue cooking for 5 minutes until cheese fully melts.
Top nachos with avocado, salsa, cilantro, and green onion.
Gobble up and enjoy!
CHEF'S NOTE: If you don’t have taco seasoning, make your own by mixing together 1 teaspoon cumin, 1 teaspoon chili powder, and 1/8 teaspoon of cayenne.
