Smoky & Sweet Chili Turkey Tacos

Ingredients

1 package GATC Smoky & Sweet Chili Turkey Breast Cutlets or Strips

2 tablespoons olive oil
-
1 small head red cabbage, shredded

4 carrots, shredded
-
2 ears of corn, shucked and sautéed or grilled

1 avocado, cubed
-
4 corn tortillas
-
1 cup Colby Jack cheese, shredded

1/2 bunch cilantro, chopped

1lime, cut into 4 wedges
NYC STREET CART SAUCE
- 1/2 cup plain Greek yogurt
- 2 tablespoons distilled white vinegar
- 1 teaspoon black pepper, freshly ground
- 1/2 teaspoon dill, dried
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- avocado, optional
Directions

In a skillet over medium heat, add olive oil and GATC Smoky & Sweet Chili Turkey Cutlets. Cook covered for 3 minutes on each side until internal temperature reaches 165°F.

On a cutting board, let turkey rest for 3 minutes. Use two forks to pull apart cutlet meat until shredded. Set aside and keep warm.

In a food processor, add the NYC Street Cart Sauce ingredients and blend until smooth.

In a bowl, add red cabbage, shredded carrots, a tablespoon of NYC Street Cart Sauce, and mix into a coleslaw.

In a separate bowl, combine corn and avocado.

In a small skillet over medium heat, warm tortillas until soft. In each tortilla, add a generous amount of shredded turkey, topped with coleslaw, corn, and avocado.

Finish off your tacos off with a sprinkle of Colby Jack cheese, a pinch of fresh cilantro, and a drizzle of the NYC Street Cart Sauce. Lastly, squeeze one lime wedge on top of each taco.
